Pencil Sharpener seems to sharpen pencils on demand, along with just sharpening them for fun. She might be scared easily and also might be somewhat defensive as seen when she first get scared by Sticky Note who just ask her if she wants to join his team. She might also be helpful as well seen when she asked BFDI Mouth if he needs to sharpen his pencils. Maybe a little to much since the pencils were already sharpened.
