Sans was okay with what he had. Reaping sinful souls had been what he'd done for the past centuries, and he didn't enjoy it, but he could manage it. Unfortunately, after he had accidentally killed the person he loved, he went crazy and suicidal, with bits of his soul lost. Toriel helped him, getting back his sanity.
However, his soul is still not complete, and he is still partially insane. He is back to normal, for the most part. He still can become uncontrollable and temporarily crazy sometimes

Sans also has a supporting, caring personality. In Outertale, Sans cares for his love of Frisk much when Frisk supports mercy.
However, when Frisk does a Genocide Run, Sans' personality changes. He becomes concealed. Like Undertale Sans, he  judges the player very harshly.
Sans also likes puns and tells them so much to the point that it annoys his younger brother, Papyrus.
Outertale Sans is also sometimes depicted as a bit shy.

He is a skeleton with sharp teeth, with one being gold. Sans's red eye shows to reflect how “corrupt” (mainly emotionally hopeless) he’s gotten, so when it flickers, it would be yellow and orange. Sans holds in a lot of emotional stress, so he’s constantly radiating his powers and eye 24/7, which mostly affects his jacket fur. He wears a black winter jacket with a jacket fur flame hood and a gray cotton hoodie, and a red sweater with a golden chain with black pants that have gold strips.

He doesn't like puns but likes knock knock jokes, 

Sans is flamboyant, excitable, loving, and enjoys making tacos for his friends. He is also quite kind to others, such as the protagonist will never be killed by him; instead, Sans captures the protagonist if the protagonist reaches one health bar.

Sans is the same with his Underfell persona during the beginning. However, he is redeemed as Frisk gives him hope that kindness and goodness is possible. He calls Frisk by pet names like "honey" or "sweetheart". He is capable of remembering everything from each of Frisk's resets.
In this AU, Sans is 7ft tall, while his brother Papyrus is 10'8".
