The absolute last straw was the disagreement over the Slug Club party. Hermione really was planning to invite him but the argument was a step too far. So, Hermione wanted to do the only logical thing a girl would do when the boy she liked argued with her: she wanted to make him jealous, to make him feel guilty and regretful for being insufferable and considering another girl.
While she was never 'boy-crazy' or even remotely interested in dating, this was Ron we're talking about. And besides, once she set her mind to something there was nothing in the wizarding world that could stop her.
