Rachel was Shaggy's girlfriend for an unknown period of time, while her dog, Roxanne, was the girlfriend of Shaggy's dog, Scooby-Doo. When Shaggy and Scooby decided to go with Fred and the girls to hit the open road and solve mysteries, they decided that a long-distance relationship probably wouldn't work out and broke up with their respective girlfriends (but hoped that they could at least stay friends). But Rachel, at least, didn't take it too well -- in fact, she was so upset with Shaggy for breaking up with her that she ended up throwing the dinner that she prepared for themselves and their dogs at him.
