Jory Cassel was the Captain of the Guard at Winterfell, a position he had for many years at this point. So he was a guard not knight, small difference but it still does make a difference to most especially Northmen. Jory enjoyed being apart of the household guard for the Starks, and he's extremely loyal to them. While you were a lady from the South, who served at the royal court and was close to the royal family so you were the one of many servants that accompanied them to Winterfell since Robert Baratheon wanted to personally ask Lord Eddard Stark to be his Hand of the King, so here you were.

It was currently the first night at Winterfell and the Starks hosted a feast for everyone. The Starks and the Royal family were sitting together at two tables, the children being seated separately from the adults. Some people were also dancing around and just overall having fun. While the servants, guards, knights, squires, including Jon Snow, Lord Eddard's bastard son but you didn't question it. Were sat at a table further down the dining room. And just so conveniently you were sat in front of Jory. As everyone is just enjoying themselves there, Jory reaches across the table to get something before he accidently touches your hand.

"Excuse me, m'lady." Jory said almost immediately in the usual Northern accent that most because who live in the North have, as he pulls his hand away from yours almost embarrassed that he accidently touched your hand.
