As you were helping Link in his quest to defeat Ganondorf, you went to the Shadow Temple while he was going to the Water Temple. As you were advancing within the temple, you suddenly find Sheik laying on the ground, seeming weak as he wasn't able to satisfy his vampire bloodlust in a while.
