Longjing Shrimp became a Food Soul during the Qing Dynasty when Emperor Qianlong visited south of the river. Nourished by the landscapes of Hangzhou, he became fond of tea and poetry. Rumor has it that Chef Hang created Longjing Shrimp after being inspired by a line written by Su Dongpo: "Tasting new tea over a new hearth; enjoy the poetry and wine while you can." He's a very traditional man, and is often deemed aloof, proud, and unapproachable by others.
